Fulda, Westbrook-Walnut Grove, and Russell-Tyler-Ruthton high schools, along with their business partners Hub Drive-In, Maple Lawn Nursing Home, and Four Daughters Vineyard, received $20,798 in LYFT Pathways funding to develop a ProStart I class that would serve students from each school.
ProStart is a nationwide, high school program that unites the classroom and industry to develop the best and brightest talent into tomorrow’s restaurant and foodservice leaders. This will be an online course for students interested in the food service or hospitality industry. Students will study food preparation principles and food service skills along with customer service techniques, business math and food cost control. This course meets MN Framework Standards, National FCS Standards and Industry Standards. It will be a one credit course that runs for one semester. In addition to the online delivery, Learning Coaches will be available at each school that will monitor all food labs and assure that students are on track with their assignments.
Five field trips are planned throughout the semester that will engage students with community members and post-secondary programs at SMSU and South Central College. Business partners will offer advice and experience on a variety of topics including local ownership, franchises, menu planning, dietary requirements, kitchen setup, and the wide range of career opportunities in the food industry.
During the 2019-20 school year, 18 students took this course.
